    Spinach & Strawberry Salad

    Ingredients

    2 bunches of spinach, torn into bite sized pieces
    4 cups sliced strawberries
    ½ vegetable oil
    ¼ white wine vinegar
    ½ cup white sugar
    ½ tsp paprika
    2 tbsp. sesame seeds
    1 tbsp poppy seeds

    Directions

    1. In a large bowl, toss together the spinach and strawberries.
    2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

    Ingredients

    2 cups quinoa
    Kosher salt
    3 cups fresh corn kernels (6 ears)
    1 bunch green onions, finely chopped (about 1 cup)
    3/4 cup chopped fresh mint
    1 tablespoon lemon zest
    1/4 cup fresh lemon juice
    1/4 cup extra-virgin olive oil
    1/2 teaspoon freshly ground pepper

    Directions

    1. Rinse quinoa in large sieve under cold running water. Cook quinoa in 4 cups boiling water with 2 teaspoons kosher salt 10 to 15 minutes or until almost tender. Drain; spread onto a large sheet pan, and cool 15 minutes.
    2. Mix quinoa and remaining ingredients and mix well.
